Hummus

2 med zuchinni, chopped (about 2 1/2 cups)
3 cloves garlic, pressed
1/3 cup lemon juice, fresh squeezed
1 tsp pink himalayan salt
1 tsp paprika
1/2 tsp cumin powder
1/2 cup sesame seeds, soaked 3-4 hours
1/2 cup tahini

Blend all ingredients except sesame seeds and tahini in vita-mix until smooth. Add sesame seed and tahini and blend again until mixture is smooth and creamy. Enjoy with your favorite crackers or inside lettuce leaves garnished with tomatoes and sprouts. Will keep for up to a week in your fridge. Hummus thickens over time, which you may prefer!
